This creamy tomato soup recipe is one that both Kids and Grown Ups love. I know there are a ton of tomato soup recipes out there, some with roasted tomato, tomato soup with paprika and so on. Although  they all sound good, I personally am someone that likes simplicity. Especially when children are involved, just keep it simple but give it your best, for instance, use fresh tomato and not can tomato, homemade stock instead of water and maggi, take your time and let ingredients cook slowly instead of rushing the cooking process.

Most people will agree that cooking is a form of art and you can get crazy creative with any recipe but to me, when it comes to recipe like this creamy tomato soup, simple is better.

The reason behind me posting this recipe on my blog is because, last week my daughter requested tomato cream soup and even though I have made this soup in the past, I decided to go Google tomato cream soup recipes and Oh mine was I overwhelmed. I did actually wonder why some people like to complicate simple things. So I decided to just stick to my simple recipe and not try a different tomato soup recipe that my kids might not even like.

With that being said, am not telling you my tomato cream soup recipe is the best out there. All I know is that my children love it and even my son, who is five, will always tell me while eating this soup, ” mommy, can you please make this soup again tomorrow “. That is how much he likes it and so if you are searching for a simple, easy, yet delicious homemade creamy tomato soup recipe for you and your family with kids, both young and old, then this recipe is a keeper. To make my tomato soup recipe, you will need ;

Ingredients :

390 g Fresh tomatoes ( 4 medium to large ones )

100 g White Onion ( 1 medium size )

5 g Garlic ( 1 clove )

5 g Ginger ( a small piece )

250 ml Stock ( 2 cups ) ( I used turkey stock but use your preferred stock that is homemade )

35 g Parmesan Rind ( the protective layer around the cheese ) ( optional )

1/2 tsp Coconut Sugar or granulated white sugar ( optional )

1 Tablespoon Oil ( I used sunflower oil but use what you prefer )

1 Tablespoon Heavy Cream ( optional )

Salt /pepper to taste

Process :

Step one: Start by washing tomatoes, onion , ginger and garlic. Chop them up kind of roughly and in a clean medium size pot, add oil, chopped onion, garlic and ginger. Sauté for about 2-3 minutes, or until onions begin to soften up.

Step two: Add in tomato, salt, black pepper, but skip the pepper if you will be having the soup with a toddler. Add stock, coconut sugar, this is to help balance out the acid in the tomato, season with salt and pepper, being mindful of the amount if you plan on eating the soup with younger kids. Add rind of parmesan cheese, cover with lid and cooking for 15-20 minutes . When done, remove from heat and let it cool for about 10 minutes.

Step three: Remove the cheese rind and using a stand blender or a hand blender, blend tomato soup until it is creamy. Adjust the thickness of cream soup to your personal preference by adding more stock if you like it more thin. Wash the pot and transfer the creamed tomato soup into it. Add heavy cream and your creamy tomato soup is ready.

creamy tomato soup recipe For serving , my kids and I, had it with some plain rice and steamed vegetables. To add a little touch, garnish the soup with a few fresh basil leaves.
