A Spinach Recipe That Is Not Boring


Well, this Spinach Recipe is definitely for those that love spinach. I do know that spinach is not a favourite for many people, especially children, I don’t blame them at all.  Spinach is quite boring and plain tasting but with the correct seasoning and the right serving combinations, you can create an amazing meal with your plain tasting spinach.

Besides spinach being cheap and easy to prepare, it is loaded with tons of nutrients like iron, vitamins and minerals. It contains antioxidants, which is good for skin, magnesium, which is necessary for energy metabolism, maintaining muscle and nerve function. It is also rich in vitamin k which helps prevent blood clots.

So as you can see, am not just trying to convince you to love spinach because of this amazing spinach recipe that am about to share but the fact is that, it’s good for your body period.

Now let me show you how to make the one and only spinach recipe, that is in my opinion extremely good, served with bread dumpling, boiled egg and some onion rings.

Ingredients For cream Spinach :

  •  500 g Fresh Spinach
  • 30 g Butter
  • 1 Small Onion
  • 1 Clove of Garlic
  • 1 Tablespoon Heaving Cream/Milk
  • 1/4 Cup Stock ( optional ) Or Broth cube ( which is dehydrated stock )
  • 1/4 Cup Water
  • Salt/Pepper to Taste

Ingredients for Bread Dumpling :

  • 200 g Whole Wheat Bread Cubes ( 4 rolls of old bread, it can also be white bread )
  • 2 Tablespoons onion
  • 2 Eggs
  • 220 ml Warm milk ( about 1 cup )
  • 1 Tablespoon Butter
  • 2 Tablespoons Coriander/Parsley
  • 1/2 teaspoon Nutmeg
  • Salt/Pepper to Taste

Process :

For Bread Dumpling ;

Am using whole wheat bread cubes, this i buy from my local grocery store but you can also use the normal white bread. Or if you have a few days old white bread laying around, just cut into cubes and it will get the job done.

Step one: Put bread cubes in a clean bowl and add warm milk to it.

Step two: In a small pot, melt the butter, then dice onion and add to it. Sauté until the onion gets a bit soft but it should not get brown the add to bread cubes.

Step three: Beat the eggs separately and add as well. Give it all a stir, add chopped coriander ,pinch of salt, nutmeg and some black pepper ( but skip the pepper if you will be feeding some of this to your toddler ) and combine everything. Cover with plastic wrap and let it sit for 30 minutes. After 30 minutes, using some of the plastic wrap, put a few scoops of bread mixture in a piece of plastic wrap, wrap around and twist the ends to seal then put aside.

Repeat this process until you have all the bread wrapped. Here is a full video of me making this Spinach recipe

Process :

Spinach Cream/sauce ;

Step four: First wash spinach and blancher 2 minutes in hot water, remove from water and pour very cold water on it to stop the spinach from cooking further. Using the same boiling water used the blanch the spinach, cook the small onion and clove of garlic between 3-5 minutes.

Step five: Using a liquidiser, blend spinach, garlic, onion and 1/4 – 1/2 cup water, depending on how thick or thin you want the cream spinach to be and also how creamy you prefer it. In a medium size pot on low heat, melt 20 g of the butter, add creamed spinach and give it a stir.

Step six: Add stock ( I used the juice from a chicken I baked the day before or just add a bit of water if that is all you have). Note that the stock adds flavour to the spinach sauce. Salt and pepper the spinach sauce, give it a stir and cover with lid.Wait till it starts to bubble then add heavy cream/milk and the leftover butter, stir well, cover with lid and remove from heat.

Step seven: Now in big enough pot with a lid, add a bit of water and a pot steamer basket. If you don’t have a pot steamer basket, you can cook the dumplings in salt water like my potato sweet dish recipe. Arrange bread dumpling in the pot steamer basket, cover the pot with lid and steam bread dumplings for 30 minutes on a low to medium heat.

Step eight: After 30 minutes,   insert a tooth pick in one of the dumplings and the tooth pick should come out clean when they are cooked through. Put the dumplings in a bowl, cut them in medium size slices and serve with your cream spinach sauce. In this recipe, I served mine with some boiled egg and onion rings but you can equal serve it with some baked chicken, pork or turkey.
