Whether you are making it for yourself or for you and your baby, this One Pot Potato Dinner is one that you will definitely grow to love. It is extremely easy to make, takes little to no time at all, less pots to wash since everything is cooked in one pot and you can easily switch meat for chicken, hot dogs or just vegetables .
To start we have,
- Carrot (1 orange, 1 yellow)
- Yukon Gold Potatoes (4 pieces)(620 g)
- Can Tomato (1 cup ) Or Freshly diced (210 g)
- Organic Beef (1 Cup)(200 g)
- Small Size Onion (1/4 cup)(36 g)
- Leek/Spring Onion (2 Tablespoons)
- Garlic (2 cloves)
- Stock (3-4 Cups)
- Oil (3 Tablespoons)
- Bayleaf Plus your Favourite Spice.
- Greek Yogurt and Coriander for garnish (Optional)
Make sure all vegetables are washed and cut according to your personal preference.
In a medium size pot, heat up oil on medium to high heat.
Add beef, salt/pepper and sauté for 3-5 minutes or until meat has a bit of colour. Add diced onion, sauté for 2-3 minutes then add in 2 Cups of stock, cover with a lid and let the meet cook on low heat for 10-20 minutes (until a bit soft). Add a little more stock if needed.
Add crushed/diced garlic, carrots, tomato, potato, bayleaf , salt/pepper and a teaspoon of your favourite spice. Again, add more stock (liquid) if needed.
Cover the pot with its lid and cook for 15 minutes or until everything is nice and tender. Add Leeks/spring onions and cook or 1-2 minutes, throw in some coriander or parsley (according to your preference ) and dinner is done.
For the baby, depending on how old your child is, you can puree his/her portion a bit or using the back of a fork, mash it up a little, add some fresh plain yogurt , dish yours and you guys enjoy the fruit of your labor.
