In this blog post, am going to show you how to make my fish recipe, perfect for Christmas eve. As a Catholic, our dinner on the night of 24th has to be fish and this fish recipe has been my favourite for a few years now. It is simple, easy to make and taste really clean.
I like serving this fish with potatoes and some salad but you can equally serve it with rice or couscous salad. As always, for my mom’s with little one’s, am going to show you how you can prepare a portion from the main dish for your little one.
Note : Am using Kabeljau (cod) in this recipe but you can also use Coalfish, Goldfish, Zander or Pangasius. Which ever one you can get your hands on will be fine. Let’s start cooking some fish then ;
4 Cod fillet (200 g)
2 Pieces Fresh Tomatoes (200 g)
3 Bell Peppers (300 g) red, yellow and green ( 1 each diced)
Bacon (80 g)
150 ml Stock (vegetable, chicken or beef) (I used beef )
1/2 Onion, diced
1 Tablespoon Oil
Salt/Pepper to taste
Run cold water on fish, using a kitchen towel, pad dry, check for pin-bones. Pre-heat your Oven to 200°C.
For the Bell pepper vegetable mix, wash and deseed bell peppers and dice into small cubes. Blanch the tomatoes by simply boiling water, make a cross sign at the tip of each tomato and cook shortly (2-3 minutes). Put in cold water, peel skin off, the deseed and dice.
In a pan, heat oil and bacon, add onion and bell peppers and sauté for a few minutes. Add stock, tomatoes, a bit of salt/pepper to taste and let it all come to a boil.
In a baking dish, put half of the bell pepper vegetable mix in and lay fish next to each other on top. Cover with the rest of the vegetable mix, use an aluminium foil ( optional) to cover and bake for 20 minutes.
For the little one’s portion, if you choose to serve your fish with potatoes like I did, Check out my YouTube for the full video. Take 1-2 small potatoes , add a small piece of fish and some of the stock with vegetables and just puree until desired texture and consistency is achieved and its that simple.
