In this blog post, am sharing My Easy Fruit Cake Recipe that I personally think every mother must have in her recipe book. It is moist, fruity, tasty and most importantly easy to make.
So I don’t know about you but I prefer to feed my kids with desserts that I prepare myself , rather than the store bought stuff. The main reason why I love baking for my family is because I can really control the amount of sugar that goes in the recipe plus I only get the best possible ingredients that I can find. Also, the house smells amazing and with this cake, the combination of a bit of sweetness from the cake batter and a hint of tartness from the plum, you get this beautiful taste that is just worth trying.
The decision to share this fruit cake recipe with the rest of you mothers around the world, is because I want us all to be able to present incredible recipes on the dinner table that looks like entail a lot of work but actually doesn’t . And this recipe does just that, so to begin you will need;
600 g Plums
250 g Butter (at room Temperature)
250 g Granulated White Sugar
250 g All-Purpose Flour
5 Large Eggs
1 Lemon Zest
1 teaspoon Pure Vanilla Extract
Note : For this fruit cake recipe, you can either use a stand mixer, hand mixer or a wire whisk .
Step one: Wash Plums, cut in half and remove the seed. Squeeze half a lemon juice on it to prevent the inside from turning brown and set aside.
Step two: In a mixing bowl, combine butter and sugar( make sure the butter is at room temperature but firm to the touch) and beat for about 3 minutes or until it looks peal and fluffy. Scrape sides of the bowl if needed.
Step three: Add in Eggs, one at a time and beat each egg for about 1 minute, scraping sides of bowl if necessary. Add Vanilla extract and mix briefly.
Step four: For the dry ingredients, in another bowl, combine flour, salt and lemon zest. Using a wire whisk, stir to to combine. In 3 batches, add the flour mixture. First batch, give it a quick mix, second batch, another quick mix and then the third batch. Mix batter well enough that there are no lumps in it but also avoid over mixing as this will only make the cake batter though.
Step five: With the oven pre-heating, put some butter in the caking pan and grease well to prevent the cake from sticking ( I use a 28 cm round baking pan, just use whatever baking pan you have ). Now transfer the cake batter into baking pan and spread evenly. Arrange the plums according to your preference and bake in your pre-heated oven for about 50-55 minutes or until a toothpick inserted in the middle of the cake comes out clean.
Step six: After your fruit cake is done, let it sit on a wire rack to cool for about 15 minutes and enjoy with some wipe cream, vanilla Ice- cream or simply with a cup of tea or coffee.
This fruit cake recipe is one that both grown ups and children love and you can switch the plums for apple, apricot or even berries.
