How To Cook The Best Lentils Bolognese

This Lentils Bolognese recipe that is totally Vegan, meaning there is no meat used here is delicious. Not only is it perfect for those that are Vegan but also great if you are a mom or dad that is looking for ways to introduce beans ( lentils ) to your 10 months old and  above. As we all know, Lentils is a great source of plant-based protein and is high in fibre. So for those of us that love meat but still have those days where we want to go meat or poultry free, this is a great option as far as dinner goes.

Having a dad that is strictly Vegan, although my mother and us the kids weren’t, I grew appreciating that option. And I personally believe, when it comes to food, the more simple it is, the better it tastes. So let me go ahead and show you how to cook the best lentils bolognese for you and your family.

Ingredients :

60 g ( 1/3 Cup ) Lentils ( am using the type split in half )

400 g Can Tomatoes

1 30 g ( 1 medium size ) Onion

130 g ( about 4 small -medium size ) Carrots

1/2 Cup Vegetable Stock or water

2 Tablespoon Oil

1 teaspoon Oregano ( dry or fresh)

1/2 teaspoon Tomato paste

Salt /pepper ( skip pepper if your little child will eat this with you )

200 g Whole Wheat Pasta

2 Tablespoons Leek ( optional )

Coriander to garnish ( optional )

1 Clove of Garlic

Process :

Step one: Make sure lentils are clean. Wash onion and carrots then dice into small pieces. In a medium size pot on a medium heat, add oil ( sunflower or olive oil ), onion and carrot then the lentils and sauté for about 5 minutes.

Step two: Add Tomato paste and garlic, the the Can Tomatoes. Give it a stir, add the vegetable stock or water, which ever you prefer. The stock will of cause give it an extra flavour. Add pepper and salt to taste, oregano and stir to combine.

Step three: Cover the pot with a lid and cook on low heat for about 15-20 minutes.

For the pasta, using whole wheat because it is healthier, I made 200 g following the cooking instructions on the package, which stated cooking it for 8 minutes for al dente result but definitely cook it a bit longer when little children are involved.

When the pasta is done, strain the water but save some for later. Add cooked pasta to the lentils bolognese once it is done and coat well in lentil sauce .

Serve with a bit of coriander sprinkle on top with freshly grated parmesan cheese and enjoy. If you haven’t already, check out my other Lentils Recipe here
